Bird King Green (鳥王綠茶, Niǎo Wáng Lǜ Chá, “Bird King Green Tea”) is a local race of tea plants from Guiding, Guizhou. Master Lin of the Panying Mountains subjects this long-stem green tea to a traditional Guizhou processing technique involving a long withering and gradual oxidation. This produces a lightly oxidized tea that resembles an oolong. Compared with its sister tea, Gǔ Fǎ Xiāng, Bird King has a more robust taste and deeper mouthfeel, with more grassy than floral notes.
