Taiwanese Oolong Tea

Taiwanese Oolongs (台灣烏龍, Táiwān Wūlóng, "Taiwanese Oolongs") also known as Formosa Oolongs after the Portuguese word for "beautiful," are famous for an innovative style of low-oxidation processing that produces an abundantly floral leaf. There are, however, traditional-style charcoal roasted Taiwanese Oolongs that are higher in oxidation. Taiwanese Oolongs grown at high altitude are especially prized and known as gāo shān chá 高山茶 ("high mountain tea").
