Butterfly Pea Flower (蝴蝶豆花, Hú Dié Dòu Huā, "Butterfly Bean Flower") - Butterfly Pea (Clitoria ternatea) is a vine from Southeast Asia that is in the pea family. Its beautiful blue flowers have been used traditionally to make a bright blue infusion. This herbal tisane has a mild sweet flavor, and has been used to flavor and color desserts and to make blue rice. It has been shown to be anti-inflammatory and have a suite of other health benefits. Naturally caffeine free, kids (and adults) love the brilliant blue liquor that this flower produces. When anything acidic is added to it, it changes the color, as though by magic, to a dazzling purple, instantly. This makes it popular for mixed drinks. But hey it's great hot poured gong fu style as well! One of our favorite herbs.
